If you have never heard of Skinny Scoop, well it’s basically the best protein ice-cream on the market. You can read all about it on my product review blog post [here]. But right now it’s time for another of their delicious recipes, and, this one is perfect for Easter! Introducing these mouth watering Skinny Scoop Happy Easter Chicks.

Skinny Scoop: Happy Easter Chicks!

Untitled design (71)

Serves 2

Ingredients:

2x 175ml tubs Vanilla Camilla

50g organic coconut flakes, lightly toasted (Wellness Warehouse)

2 raw almonds

6 goji berries

4 raw cacao nibs

Method:

1. Remove Skinny Scoop from the freezer and allow to melt slightly. Using a butter knife, slide it around the ice-cream to loosen from the tub. Turn upside down onto a small bowl (We used some vintage butter dishes), and carefully pop the ice-cream out the tub.

2. Cover with lightly toasted coconut flakes and add the features: an almond for the beak, the cacao nibs for the eyes and the goji berries for the head.

3. Place back in the freezer until ready for serve.
