I saw on Twitter this morning there were quite a few people tweeting about awesome soup recipe’s to help us through the Winter chill… There was immediately one that came to mind and I thought I would share it with you guys & dolls! It is the most amazing homemade roasted butternut soup recipe and is EXTREMELY cheap to prepare. I also have an amazing chicken soup one that I tasted at a friend’s place the other night but unfortunately it is a family secret recipe. Bummer, else I would share that with you too!
Homemade Roasted Butternut Soup
Ingredients:
2 medium sized butternut
2 medium sized onions
2 cloves of garlic (fresh)
a few sprigs of thyme
1 litre of chicken stock (your own or cubes)
salt and black pepper to taste
a splash of vegetable oil (I prefer to use olive oil)
Preparation Method:
Preparation: 20 minutes | Cooking: 1 hour
1. Firstly roughly chop the butternut (disposing of the seeds) and onion into medium size chunks, and crush the garlic.
2. Put a bit of oil into a roasting tray and throw in the butternut, onion, garlic and thyme.
3. Roast in a pre-heated oven for 30-40 minutes at 180 C or until the ingredients have a nice caramelised colour to them, but not burnt!
4. Warm up the stock, then put all the roasted vegetables into a blender, with a couple spoonfuls of stock and blend.
5. Depending on how thin or thick you like your soup, you can now add more stock (I like it thick so add minimal stock). If you find you have put too much stock in don;t stress, just place the soup into a saucepan and slowly boil until the soup has reduced to the consistency you want.
6. Now all you have to do is season with salt and pepperand serve. Enjoy with a few nice wedges of crusty ciabatta or French bread.
Hint: If you want to make it look that much more awesome (or impress your squeeza) add a sprig of roasted thyme and pour a dash of cream over the middle. Trust me 😉

Nothing like some nice freshly baked bread with Butro dripping off it… With a sideline of homemade soup!
